This is an easy dish to make with a few elements but it's not challenging at all. The mock beef in this recipe is tempeh. I love using tempeh for mock ground meat, it just works out so well. The texture is spot on, and all you have to do is add flavor. I opt out of using taco kit packets for flavoring, even the "organic" ones. I mean why bother? Smoky Tomatillo & Bean Chili with Toasted Quinoa and Avocado Cream

This chili is great for the winter months when it's cold AF outside. It's vegan and super filling. It's not that spicy, so if you want it spicier you can obviously add more jalapeño or red pepper flakes if you wish. I swap out tomatoes for tomatillos and it is magical. Creamy Carrot Ginger Soup

Here is a super easy soup, that is also delicious. I love roasting all the veggies first, it gives the soup way more flavor and depth. If you don't have vegetable stock you can use filtered water, but why would you do that?
