Here is a soup that you don't even need a pot to make. You just need an oven and a blender. After you roast everything in the oven you put it straight into the blender with the liquid stuff, and there's no need to heat it in a pot, just pour it right into your serving bowls and garnish it. I must admit, this soup was born out of laziness, which is honestly how I come up with most of my recipes. Don't judge me, monkey.
Here is a super easy soup, that is also delicious. I love roasting all the veggies first, it gives the soup way more flavor and depth. If you don't have vegetable stock you can use filtered water, but why would you do that?
This stuff is like crack. You've been warned. I made this once and it disappeared in about a day, then I made a double batch and it lasted 12 hours. Sooooo yea. Hide this from everyone. Not to mention, it's the easiest granola you will ever make. Super crispy and crunchy and the perfect amount of sweet. To sum up, it's badass.
I have been experimenting with Einkorn flour lately and I'm in the process of making my own sourdough starter for a lovely Einkorn Sourdough Bread, but that's neither here nor there. Right now I have an awesome chocolate chip cookie recipe made with einkorn. It's very easy and the cookies come out great. Einkorn flour has been said to be ok for people with gluten-sensitivities.
