This is an easy dish to make with a few elements but it's not challenging at all. The mock beef in this recipe is tempeh. I love using tempeh for mock ground meat, it just works out so well. The texture is spot on, and all you have to do is add flavor. I opt out of using taco kit packets for flavoring, even the "organic" ones. I mean why bother? Here is a soup that you don't even need a pot to make. You just need an oven and a blender. After you roast everything in the oven you put it straight into the blender with the liquid stuff, and there's no need to heat it in a pot, just pour it right into your serving bowls and garnish it. I must admit, this soup was born out of laziness, which is honestly how I come up with most of my recipes. Don't judge me, monkey.
Here is a super easy soup, that is also delicious. I love roasting all the veggies first, it gives the soup way more flavor and depth. If you don't have vegetable stock you can use filtered water, but why would you do that?
