I have been experimenting with Einkorn flour lately and I'm in the process of making my own sourdough starter for a lovely Einkorn Sourdough Bread, but that's neither here nor there. Right now I have an awesome chocolate chip cookie recipe made with einkorn. It's very easy and the cookies come out great. Einkorn flour has been said to be ok for people with gluten-sensitivities. Today I start a new chapter in my life... Removing sugar from my diet. Phew! That took a lot of strength to say. Not unlike the many people in this world I do love a nice sweet treat. Although I have stayed away from refined sugars and HFCS (high fructose corn syrup), I could not stay away from organic maple syrup and raw honey, my sugar staples. Aaah, the new year is almost here. Time for starting over, beginning fresh, trying new things, making ridiculous promises to yourself that you really think you can handle, all that good stuff. I don't think I've ever made anything more addicting than these cookies. You have been warned… Preheat your oven to 350 degrees and line 2 baking sheets with parchment paper. If you don't have parchment paper don't use aluminum foil because it's useless, just oil your pans down with some coconut oil. Here we are sifting our dry ingredients with a fine mesh strainer. If you don't have a fine mesh strainer, you're a loser, but the recipe will work anyway.
