Here is a super easy soup, that is also delicious. I love roasting all the veggies first, it gives the soup way more flavor and depth. If you don't have vegetable stock you can use filtered water, but why would you do that?
This stuff is like crack. You've been warned. I made this once and it disappeared in about a day, then I made a double batch and it lasted 12 hours. Sooooo yea. Hide this from everyone. Not to mention, it's the easiest granola you will ever make. Super crispy and crunchy and the perfect amount of sweet. To sum up, it's badass.
I have been experimenting with Einkorn flour lately and I'm in the process of making my own sourdough starter for a lovely Einkorn Sourdough Bread, but that's neither here nor there. Right now I have an awesome chocolate chip cookie recipe made with einkorn. It's very easy and the cookies come out great. Einkorn flour has been said to be ok for people with gluten-sensitivities. I don't think I've ever made anything more addicting than these cookies. You have been warned… Preheat your oven to 350 degrees and line 2 baking sheets with parchment paper. If you don't have parchment paper don't use aluminum foil because it's useless, just oil your pans down with some coconut oil. Here we are sifting our dry ingredients with a fine mesh strainer. If you don't have a fine mesh strainer, you're a loser, but the recipe will work anyway.
